Beetle-Kill Pine is definitely gaining popularity here in Colorado, as folks are realizing the need to use this valuable and abundant resource.  There is no better place to showcase a constructive use for the effects of the pine beetle epidemic than in a locally-owned restaurant setting.  We were contacted by Leorah Young and Theo Adley at Boulder’s newest venue The Pinyon, to add to their concept of locally-sourced ingredients, timeless, hand-prepared foods and their strong sense of responsibility to the local environment, by building the restaurant’s tabletops from Beetle-Kill Pine.  The owners wanted a design that was solid and earthy, yet classy and memorable.  The following pictures and descriptions show the evolution of the Blue Pine Woodworks butcher block-style tabletops we built for them.

The Pinyon is located at 17th and Pearl and is slated to open early December, 2010.
